LUCA Festive Recipe: Cinnamon Protein Power Balls

Coated in desiccated coconut (making them look like snowballs!), they're high in protein and healthy fats, and thus calorically dense. Our festive power balls are a powerhouse of balanced nutrition designed to support energy and aid recovery whilst allowing you to indulge in a seasonal treat. Each ball gives a pretty balanced macronutrient profile, with plenty of protein from both almond flour and protein powder (supporting muscle repair and helping to maintain energy levels).

Healthy fats from coconut oil and almond butter add richness and contribute to satiety, helping you to feel full for longer. Fats also play a crucial role in nutrient absorption and energy sustenance - ideal for active lifestyles.

There's lots of fibre too, largely from chia seeds and flaxseeds. This means improved digestive health (a good thing during the holidays!). Meanwhile, walnuts and pecans provide omega-3 fatty acids, known for their anti-inflammatory properties. The subtle sweetness from honey or maple syrup combined with dried cranberries, offers quick energy whilst balancing flavours.

Finally, cinnamon adds warmth and helps to regulate blood sugar levels… it's a favourite LUCA festive spice too!

  • Ingredients:

    • 1 cup (100g) almond flour
    • 1/2 cup (50g) whey or plant-based protein powder (vanilla or chocolate flavour)
    • 1/2 cup (just over - 60g) almond butter (or any nut/seed butter of choice)
    • 1/4 cup (20g) chia seeds or ground flaxseeds
    • 1/2 cup (50g) chopped walnuts or pecans
    • 1/2 cup (50g) dried cranberries (unsweetened if possible)
    • 2 tbsp coconut oil (melted)
    • 2 tbsp honey, or maple syrup
    • 1 tsp vanilla extract
    • 1 tsp ground cinnamon
    • Pinch of salt
    • 1/4 cup dessicated coconut (for rolling)
  • Instructions:

    1. Mix dry ingredients: in a large mixing bowl, combine almond flour, protein powder, cinnamon, chia seeds, and pinch of salt.
    2. Add wet ingredients: add almond butter, melted coconut oil, honey/maple syrup, and vanilla extract. Stir until well-combined.
    3. Add festive ingredients: add chopped nuts and dried cranberries.
    4. Form balls: roll the mixture into small balls, about 1 tablespoon each.
    5. Coat with coconut: roll each ball in desiccated coconut until coated.
    6. Chill: place the balls in the refrigerator for at least 30 mins to firm up.
